摘要
根据GB 5009.227-2016《食品安全国家标准食品中过氧化值的测定》,建立食品中过氧化值测定不确定度的数学模型,通过对整个测定过程中各种不确定度因素的研究,分析该测定方法不确定度的来源并对其进行评定,确定不确定度分量,合成不确定度。结果表明:当样品过氧化值为0.080 g/100g时,其扩展不确定度为0.006 4 g/100g(k=2)。其中测量重复性引入的不确定度影响较大。通过对测量不确定度的评定,为有效地控制食品中过氧化值含量的检测质量提供可靠的理论依据。
According to the method GB 5009.227-2016 Determination of Peroxide Value in Food Safety National Standard,a mathematical model of uncertainty in determination of peroxide value in food was established.Through the study of various uncertainty factors in the whole determination process,the sources of uncertainty in the method were analyzed and evaluated,and the uncertainty was determined.The uncertainty was determined by the constant component.The results showed that the expanded uncertainty was 0.006 4 g/100g(k=2)when the peroxide content was 0.080 g/100g.The uncertainty caused by repeatability was greater.Through the evaluation of measurement uncertainty,reliable theoretical basis was provided for effectively controlling the detection quality of peroxide content in food.
