摘要
铅中毒是世界公认的最常见也是危害最大的重金属中毒。有文献报道大蒜具有排铅等多种保健和治疗作用,但直接食用大蒜的排铅效果并不理想。该研究以体外模拟反应测试反应产物,并结合文献报道,探讨大蒜精油在体内的代谢方式及排铅作用的生物化学机制。结果表明,大蒜所含的有机硫化合物在提取成大蒜精油过程中转化成多种硫醚化合物,人体吸收后,在谷胱甘肽作用下,分解并释放出H2S,进而与铅结合生成胶体质粒,最后经肾脏通过尿液、或随胆汁经由肝肠循环随粪便排出。大蒜经提炼转化形成的精油是排铅的有效成分,可作为排铅的功能保健食品。
Lead poisoning,universally recognized,is the most common and dangerous heavy metal poisoning.According to the reports,garlic has multiple healthy and therapeutic effects,including lead discharging.But the discharging effect of direct oral dosage of garlic is limited.By testing the product of in-vitro simulation reaction we investigated the metabolizing route of garlic essential oil for lead discharging.The results show that the numerous sulphur compounds in the garlic are transformed into sulfides in the process of producing the essential oil.Once taken into the human body,the sulfides were decomposed and produced H2S by glutathione peptide.Then H2S reacted with lead to form PbS tiny particles,which were excreted via renal and/or GI system in the form of urine or stool respectively.The results demonstrate that the essential oil extracted from the garlic is an effective component in discharging lead and can be used as health-care food.
