摘要
绍兴作为中国文化名城,有着深厚的历史底蕴,在漫长的发展过程中,形成了光辉灿烂的饮食文化。绍兴菜是浙菜的重要组成部分,是绍兴众多历史文化遗产中最基本、最厚重、最宝贵的一部分。总结绍兴菜的基本特征,并且将其概括为五大基本特征和十大特色风味体系,为大众了解绍兴饮食文化理清了思路。
As a famous city in China,Shaoxing has a deep historical heritage.In the long process of development,Shaoxing has formed a splendid food culture.Shaoxing cuisine is an important part of Zhejiang cuisine,and it is the most basic,most heavy,and most valuable part of Shaoxing’s many historical and cultural heritages.This article summarizes the basic characteristics of Shaoxing cuisine and summarizes it as five basic characteristics and ten special flavor systems.It cleared up thought for the public to understand Shaoxing food culture.
