摘要 赖氨酸作为蛋白质的基本组成单位,是人体必需氨基酸之一,具有重要的生理功能,且应用广泛。我国赖氨酸年产量达193万t,产品90%用于饲料养殖业。近年来,随着人们生活水平的日益提高,新兴食品工业发展迅速,赖氨酸的应用也越来越受到人们的关注,各种含赖氨酸食品、饮料、医药用品应运而生,为食品级赖氨酸提供了更加广阔的市场支撑,发展趋势令人瞩目,是推动我国赖氨酸产业市场转型最佳时期,综述了赖氨酸的应用现状,并在此基础上对食品级赖氨酸发展前景进行了分析。 As a basic component unit of protein,lysine is one of the essential amino acids in human body.China produces1.93million tons of lysine,90percent of which is used in feed breeding.In recent years,with the improvement of people s living standards and the rapid development of the emerging food industry,the application of lysine has attracted more and more attention.A variety of lysine containing food,beverage and medical supplies emerged at the historic moment,providing a broader market support for food-grade lysine.The development trend is remarkable,and it is the best time to promote the market transformation of China s lysine industry.In this paper,the application of lysine is reviewed,and the development prospect of food-grade lysine is analyzed.
