摘要
研究了在3℃的低温条件下,采用不同梯度浓度(0. 5%、0. 75%、1. 0%、1. 25%)的壳聚糖保鲜液对羊肚菌涂膜处理后的相关生理指标(失重率、蛋白质、多糖、丙二醛和感官品质)含量变化的影响.结果显示,涂膜浓度为0. 75%壳聚糖组具有更明显的保鲜效果,且涂抹了壳聚糖保鲜液的羊肚菌在贮藏期间其水分、蛋白质和多糖的含量均明显高于空白组.实验表明,壳聚糖保鲜液能够有效地抑制羊肚菌的呼吸作用,减少其在贮藏期间营养成分的损失.
Under the condition of low temperature at3℃,the influence of the changes of the related physiological parameters(weightlessness)after the chitosan coating of the Morchella(weight loss ratio,protein,polysaccharides,lipid oxidation end-product malondialdehyde,and sensory quality)by the use of polymer chitosan preservative solution of different concentrations(0.5%,0.75%,1.0%,1.25%)was studied.The results showed that the chitosan with the coating concentration of0.75%had more obvious preservation effect on Morchella.Besides,the content of water,protein and polysaccharide of the Morchella coated with chitosan was significantly higher than that in the blank group,which proved that chitosan preservative could effectively inhibit the respiration of Morchella and reduce the loss of nutrients during storage.
