花色苷是广泛存在于自然界植物中的一类黄酮类化合物,来源广泛、种类繁多且具有多种保健功能,具有较好的开发利用价值和应用前景,近年来一直是国内外研究的热点之一。文章综述了花色苷的结构及稳定性、提取和纯化以及分析方法的研究进展,旨在为进一步展开植物花色苷的研究提供参考。

Anthocyanin is a kind of flavonoids widely existing in natural plants.It has a wide range of sources,varieties and health functions.It has good development and utilization value and application prospects.In recent years,it has been one of the hotspots of research.The structure,stability,extraction,purification and analytical methods of Anthocyanins were reviewed in this paper,in order to provide references for further research on plant anthocyanins.
