浅析中国菜谱的三座历史丰碑

摘要 菜谱是烹饪工艺的文字载体,是记录者留给未来的烹饪文献。古往今来,尤其是近现代以来,中国产生了难以数计的菜谱。按照菜谱构成要素、形成时间、全面性、代表性、权威性、开创性、食学文化内涵以及对后世产生的影响等标准考量,通过对以往菜谱的梳理比照,《齐民要术》《随园食单》《中国烹饪文化大典》堪称中国菜谱的三座历史丰碑。 Cookbook is the character carrier of culinary technique and dietary literature contributed to the future by the recorder.Through the ages,especially since contemporary/modern times,innumerous cookbooks have come forth in China.Immodestly it can be said that Qimin Yaoshu(Essential Arts for the Qi People),Suiyuan Shidan and Chinese Classic on Cuisine Culture are the three historical monuments of Chinese cookbooks in such viewing perspectives as constitutional essentials,formation time,comprehensiveness,representativeness,authoritativeness,creativity,cultural connotations in dietology and influences on the later generations etc.and in comparison with the anciently cookbooks.
