摘要
大米蛋白有抗癌变等保健功能,其深度开发与利用日益受到重视。作为其深度加工产品之一的抗氧化肽具有很强的功能性与很高的安全性,可很好延伸大米加工产业链。本文使用β-环状糊精对大米蛋白抗氧化肽进行脱苦实验,确定了β-环状糊精脱苦大米蛋白抗氧化肽的最佳工艺条件。
Rice has anticancer and many other health care actions,and a lot has been done to its depth development and utilization.As a product of deep processing of rice protein,antioxidant peptides have strong functionalilty and high security.This thesis did experiments on using β-cyclodextrin to remove bitter taste of rice protein peptides,and found out the best processing procedure.
