Investigation and Research on the Inheritance Status of Chaozhou Cuisine Cooking Skills

潮州菜与粤菜、客家菜并称广东三大菜系,是汉族传统饮食文化的重要组成部分。研究潮州菜烹饪技艺的传承与发展,对丰富岭南传统饮食文化内容具有重要现实意义。然而,目前潮州菜烹饪技艺在传承与发展过程中也面临一些问题。本文通过对潮州菜烹饪技艺传承现状的实证调查,分析其在当代社会传承与发展过程中面临的困境,为其在新时代的传承与发展路径的探索提供前期调研数据与问题分析。

Chaozhou cuisine,Cantonese cuisine and Hakka cuisine are known as the three major cuisines in Guangdong.They are an important part of the traditional diet culture of the Han nationality.Studying the inheritance and development of Chaozhou cuisine is of great practical significance for enriching the traditional food culture content of Ling’nan.However,at present,Chaozhou cuisine cooking skills does face some problems in the process of inheritance and development.Through the empirical investigation of the inheritance status of Chaozhou cuisine,analyzed the dilemma faced in the process of its inheritance and development of contemporary society,and provided preliminary research data and problem analysis for the exploration of its inheritance and development path of the new era.
