摘要
预调理肉制品作为现代肉制品中重要的组成部分,正呈现持续稳定的增长趋势,相关的加工技术研究随之越来越受到关注,综述了在调理肉制品加工的腌制、热加工、熏烤等各关键环节现代技术的应用,以及通过添加剂改良、微生物与酶调控等技术提升产品品质和安全性。
As an important part of modern meat products,prepared meat products have a growing share in the food market,and relevant research on processing technology is attracting more and more attention.These studies mainly focused on regulating the salted,hot working,smoked meat products processing and so on various key links the application of modern technology,and modified by additive,microorganism and enzyme regulation technology,improve product quality and safety in this article has carried on the summary to this review.
