两种方法分析白酒中己酸乙酯成分

Analysis on ethyl caproate in liquor by two methods

采用固相萃取法提取4种常见白酒的香气成分,用气相色谱-质谱联用分析其香气成分的组成和相对百分含量.实验结果可知,4种常见白酒主要香气成分组成均含有己酸乙酯,其相对百分含量都较高,其中河套老窖含59.23%、水井坊含51.82%、老龙口含68.05%、五粮液含60.87%.4种白酒香气成分中己酸乙酯相对百分含量由高到低的顺序为老龙口、五粮液、河套老窖、水井坊.采用高效液相色谱法(HPLC)定量分析4种常见白酒己酸乙酯的含量,结果为:河套老窖含0.356 5 mg/m L、水井坊含0.353 8 mg/m L、老龙口含0.618 2 mg/m L、五粮液含0.456 4 mg/m L.比较用固相萃取法提取、气相色谱-质谱联用测定4种常见白酒的香气成分得到的己酸乙酯相对百分含量与用HPLC法定量测定得到的己酸乙酯含量趋势相一致.

The aroma components of4kinds of common liquor were extracted by solid phase extraction,and the composition and relative percentage of aroma components were analyzed by gas chromatography-mass spectrometry.According to the experimental results,ethyl caproate was found in the main aroma components of 4 kinds of common liquor,and the relative percentage of ethyl caproate was higher.Hetao Laojiao contains 59.23% ethyl caproate,Shuijingfang 51.82% ethyl caproate,Laolongkou 68.05% ethyl caproate and Wuliangye 60.87% ethyl caproate.The order of the relative percentage of ethyl caproate in4liquor aroma components from high to low was Laolongkou,Wuliangye,Hetao Laojiao and Shuijingfang.High performance liquid chromatography(HPLC)was used to quantitatively analyze the content of ethyl caproate in4common liquor.The results were as follows:ethyl caproate in Hetao Laojiao was 0.3565 mg/mL,ethyl caproate in Shuijingfang was 0.3538 mg/mL,ethyl caproate in Laolongkou was 0.6182 mg/mL,and ethyl caproate in Wuliangye was 0.4564 mg/mL.Compared with solid phase extraction,the relative percentage of ethyl caproate obtained by gas chromatography-mass spectrometry for the determination of aroma components of 4 kinds of common liquor was consistent with the trend of quantitative determination of ethyl caproate by HPLC.
