摘要 紫薯又名紫色甘薯、黑薯,块根富含花青苷、蛋白质、维生素和铁、硒矿物质元素等,营养价值远远高于红薯,是一种深受人民喜爱的保健食品,市场前景广阔。该文从紫薯的营养价值、用途、茎尖脱毒技术及其应用等方面进行了综述,以期为紫薯的推广应用提供参考。 Purple potato is also called black potato or purple sweet potato.It's tuberous root is rich in anthocyanin,protein,vitamin and iron,selenium mineral element and so on,with nutritive value far higher than sweet potato.it is also a kind of health care food that is loved deeply by people,and market prospect is capacious.In the paper,the nutrition value,use,stem tip detoxification technology and its application in purple sweet potato was summarized,so as to provide reference for the popularization and application of purple sweet potato.
