摘要
镇江菜的发展受其地理位置、历史发展、地方民俗、宗教文化影响,形成了"兼容并蓄"的特点,其饮食文化曾在全国占有重要地位。经过历代镇江烹饪工作者的精心制作、不断创新,镇江菜形成了自己独特的味道,具有用料广泛、品种丰富、制作精致、口味清新平和的特点。近年来,由于主客观原因,镇江菜在区域的影响力有所下降。为促进镇江菜的传承和创新,一方面急需加强传统菜肴的挖掘和整理,同时加强镇江菜大师团队的培育;另一方面在原料、设备器皿、工艺等方面进行大胆创新,注意营养搭配、中西结合。
The development of Zhenjiang cuisine is influenced by its geographical location, historical development, local customs, religious culture and it has the characteristic of being comprehensive. Its dietary culture plays an important role in China s history. After generations of cooks carefully crafted and constant innovation, Zhenjiang cuisine has formed its unique taste and has the characteristics of a great variety of ingredients, rich varieties, exquisite preparation and balanced and mild tastes. Recently, because of subjective and objective factors, Zhenjiang Cuisine s influence in the region has declined. In order to promote the inheritance and innovation of Zhenjiang cuisine, efforts should be made to explore and enlist the traditional dishes and to cultivate a team of master chefs. On the other hand, innovation is needed in term of ingredients, equipment and utensils, and technology to achieve Chinese-western integration and balanced nutrition.
