摘要
目的:了解运城市中小学校学生食堂食品安全状况。方法:按照《中华人民共和国食品安全法》《餐饮服务食品安全操作规范》的要求,对有关食堂的食品安全状况进行现场监督调查,对相关问题进行整改。结果:通过校园专项整治,学校利用暑假整改后,从食堂操作间墙壁瓷砖整洁度到天花板铝塑吊顶,操作间完善通风,排烟排气,地面平整无积水,下水道无淤积、异味,清洗消毒留样等设施都有了显著提高。结论:当前运城市中小学校食品安全依然存在着突出的问题,需要重点加强校长第一责任人的意识、落实食品安全管理员的职责,加强监管、抽检力度,等若干对策做好当前学校食品安全工作。
Objective: To understand the situation of food safety in the student canteen of primary and secondary schools in yuncheng city. Methods: according to the requirements of the Food Safety Law of the People’s Republic of China and the Food Safety Operation Standards for Food Service, on-site supervision and investigation were conducted on the food safety situation of the canteen. Results: Through the rectification of the campus, the use of rectification after the summer vacation, school, from the basic health facilities such as the dining room to safely wall ceramic tile, ceiling aluminum ceiling, the ground flat safely without water, drain thoroughly clean, no deposit, peculiar smell, improve the ventilation and smoke exhaust, cleaning and sanitation facilities such as retention samples, on the hardware input and modification, have improved significantly. Conclusion: The school food safety in yuncheng city is still facing a serious situation and there are prominent problems at present, we need to focus on strengthening the principal’s consciousness of the first responsible person, implementing the responsibility of food safety administrators, strengthening supervision, strengthening the strength of sampling inspection and other countermeasures to do a good job in the current school food safety work.
