摘要
目的了解曲靖市辖区内餐饮行业消毒餐(饮)具的卫生质量状况,为进一步加强卫生质量监督管理提供科学依据。方法对2017年和2018年辖区内消毒餐(饮)具进行随机抽样,按GB 14934-2016《食品安全国家标准消毒餐(饮)具》标准中各项指定标准开展检测。结果 2017年和2018年共采集辖区范围内229批次消毒餐(饮)具,共有49批次检出不合格,不合格率为21.4%。其中有41批次检出大肠菌群,检出率为17.9%;10批次检出阴离子合成洗涤剂,检出率为4.4%;有2批次同时检查出大肠菌群和阴离子合成洗涤剂。结论曲靖市辖区内大多数餐饮行业消毒餐(饮)具符合质量要求,但仍有少部分餐厅存在安全隐患,需加强对消毒餐(饮)具的监管,提高消毒餐(饮)具的合格率。
Objective To understand the sanitary quality of centralized sterilized tableware in QuJing City,and to come up with scientific evidence for strengthening supervision and management.Methods Centralized sterilized tableware produced by tableware centralized disinfection units were randomly sampled from 2017 to 2018 and detected according to《The national food safety standards tableware with disinfection》GB 14934-2016.Results Totally 229 pieces of sterilized tableware were detected and the unqualified 49 pieces were checked out.The reject ratio was 21.4%. There were 41 pieces checked out coliform bacteria and the detection rate was 17.9%;There were 10 pieces checked out anion synthetic detergent bacteria and the detection rate was 4.4%; There were 2 pieces at the same time checked out coliform bacteria and anion synthetic detergent bacteria.Conclusion Most of centralized sterilized tableware in Qujing conformed to requirements of the quality,but some sanitary problems still exist. Supervision and management need to be strengthened continuously for tableware centralized disinfection units,and to improve the disinfection tableware with the percent of pass.
