余杭饮食文化遗产及其传承保护

Study on Inheritance and Protection of Yuhang Gastronomic Heritages

从食材类、技艺类、民俗类以及文献类代表性内容对余杭区域范围内的饮食文化遗产类型与特征进行研究。指出余杭地区长时间以来在以"饭稻羹鱼"与"鹿猪牛鸡"为基础食材的食生活特征下,隋唐以后,杭州的蜜桔、青梅、枇杷等水果果品成为著名的区域性美食标志。在目前已经对径山茶宴、塘栖传统烹饪技艺、三家村藕粉等较好传承的基础上,余杭区还应对烘豆制作技艺、风菜制作技艺、冻腐制作技艺、蜜饯制作技艺进行恢复性研究与传统制作技艺的传承与创新利用。

This paper studies the types and characteristics of gastronomic heritage representatives in Yuhang district from the aspects of food materials,crafts,folk customs and literatures. This paper points out that after the Sui and Tang Dynasties,the Hangzhou’s fruit,such as orange,green plum and loquat,have become famous as regional symbols in Yuhang. At present,on the basis of better inheritance of traditional cooking techniques such as jingshan tea banquet,Tangqi and Sanjiacun lotus root powder,Yuhang should carry out restorative research and innovative use of baked bean,air-drying vegetables,frozen bean curd,preserved fruit and others.
