云南不同产地玛咖营养品质分析及安全性评价 被引量:2

摘要 【目的】本文研究了云南产玛咖的氨基酸、矿质元素等营养成分组成以及农药残留、重金属的安全性评价,为云南玛咖的科学开发和合理利用提供理论依据。【方法】采用国家标准方法测定云南不同产地、色型玛咖中蛋白质、氨基酸、粗脂肪、总糖、矿质元素等营养成分以及重金属与农药残留含量。【结果】云南不同产地的玛咖营养品质存在差异。云南玛咖中精氨酸与脯氨酸含量较高,以云南省丽江市玉龙纳西族自治县太安乡生产的黄色玛咖蛋白品质最佳。分析其矿质元素发现,云南玛咖中富含钾、镁、锰等10种常量与微量元素,其中钙锌含量较高,以云南省龙陵县龙山镇所生产的黑色玛咖矿物质元素含量最佳。此外,不同产地的云南玛咖样品中有毒金属与农药残留都低于国家限量标准,可以放心食用。【结论】云南不同产地的玛咖均具有较高的营养和保健价值,可以作为保健食品资源进行进一步的开发利用。 【Objective】Maca is a kind of new food resource.In this study,the nutrient substance(amino acids and mineral elements)constituent of Maca was revealed,and the safety assessments of pesticide residue and heavy metal pollution in Maca were carried out.The results would provide a theoretical basis for the exploitation and utilization of Yunnan Maca.【Methods】Using the China national standard methods,the constituents and contents of proteins,amino acids,total fat,total sugar,mineral elements,pesticide,and heavy metal were analyzed in Yunnan Maca which collected from different regions and had a different color.【Results】There was a distinction in the nutritional quality of Yunnan Maca from different region.The contents of arginine and proline were higher in the yellow Yunnan Maca which produced in Taian Town,Yulong county,Lijian city.The analysis showed that Yunnan Maca was rich in 10 kinds of mineral elements include kalium,magnesium,manganese and so on,especially those black Maca which produced in Longshan Town,Longling county.Furthermore,the content levels of pesticide and heavy metal in Yunnan Maca from different region were far below the safety control standard of national regulation,and those Maca was safe to eat.【Conclusion】There were high nourishment value and health function in Yunnan Maca from different region.Therefore,Yunnan Maca could be further developed and utilized as a kind of new resource of health-care food.
