富含γ-氨基丁酸的孝感米酒生产工艺研究 被引量:3

摘要 孝感米酒历史悠久,营养丰富,但目前对产品成分开发不够,难以满足消费者多样化的需求。通过改进生产设备,创新工艺流程,开发出富含γ-氨基丁酸的孝感米酒,能更好地满足消费者对保健食品的需求,扩大孝感米酒的销售市场。文章介绍的富含γ-氨基丁酸的孝感米酒生产工艺,该工艺在传统工艺基础上进行了多方面的改进和创新。 Xiaogan rice wine is of long history and rich in nutrition. However,at present product development in its contents can not meet the various needs of customers. By improving production equipment and innovating manufacturing process,the manufacturers may increase γ-aminobutyric acid content in the rice wine which may better meet the customers’ needs of health food so as to enlarge the sale market of Xiaogan rice wine. This paper introduces the manufacturing process for Xiaogan rice wine and makes various improvement and innovation based on the traditional process.
