高大平房仓稻谷粮层霉菌、脂肪酸值和水分差异性研究 被引量:4

摘要 研究了高大平房仓储存稻谷不同层的霉菌量、细菌量、脂肪酸值和水分的差异。结果表明:稻谷粮堆霉菌数量中层>上层>下层,各层主要优势霉菌为黄曲霉、灰绿曲霉和白曲霉,但比例不同;下层稻谷脂肪酸值最高,中层水分最高。进一步的方差分析表明不同粮层间的霉菌量、细菌量和脂肪酸值存在(极)显著性差异,而水分差异不显著。 The differences in the amounts of mold,bacteria,fatty acid value and water content in different layers were discussed in large horizontal warehouse with late japonica rice stored.The results showed that the amount of mold in the middle layer is the highest,followed by the upper layer and the lowest.The dominant molds with different proportions were Aspergillusflavus,Aspergillusoryzaeand Aspergilluskawachii on each layer.The fatty acid value is the highest in low layer of rice.The water content is the highest in middle layer of rice.Further analysis of variance showed that.there were significant differences in the amounts of mold and fatty acid values among different grain lay ers except water content.
