电子束辐照对玉米赤霉烯酮的降解效果及玉米品质的影响 被引量:2

摘要 以玉米赤霉烯酮(zearalenone,ZEN)标准品和玉米为研究对象,研究了电子束辐照对ZEN溶液、玉米糁中ZEN的降解效果及对玉米品质的影响。结果表明,水溶液中ZEN的降解率随着辐照剂量的增加而提高。在5kGy的辐照剂量下,初始浓度为1 200.0μg/L的ZEN降解率为89.11%,当辐照剂量增大到9kGy时,降解率达到100%;玉米糁中ZEN在9kGy辐照剂量时,降解率为16.14%。5kGy剂量以下的电子束辐照对玉米的常规营养成分几乎没有影响,但5kGy剂量的电子束辐照对玉米脂肪酸值有显著影响。研究结果为电子束辐照降解其他真菌毒素提供参考和科学依据。 Using zearalenone standards and maize as the subjects,the effect of electron beam irradiation on the degradation of ZEN in standards solution and corn grits and its effect on maize quality were studied.The results showed that the degradation rate of zearalenone went up with the increase of irradiation dose.The degradation rate was 89.11%when the irradiation dose was 5 kGy,and the rate was 100%when the dose increased to 9 kGy;And the degradation rate of zearalenone in corn grits was 16.14%when the irradiation dose was 9 kGy.The conventional nutrient content of maize were not destroyed by electron beam irradiation,but the fatty acid value was significantly changed following the dose of 5 kGy.The results were intended to provide reference and scientific basis in the degradation of mycotoxins by electron beam irradiation.
