摘要
目的:研究4种花茶中Vc、游离氨基酸含量及其对亚硝酸盐的清除能力,为花茶产品的开发及保健功能的研究提供相关的实验依据。方法:采用还原钼蓝法测定花茶中Vc含量;采用茚三酮显色法测定花茶中游离氨基酸含量;采用盐酸萘乙二胺法研究花茶浸泡液对模拟人体胃液条件(pH3.0,37℃)下的亚硝酸盐清除能力。结果:Vc含量:玫瑰花>桃花>荷叶>薄荷;游离氨基酸含量:桃花>荷叶>玫瑰花>薄荷;对亚硝酸盐的清除能力:玫瑰花>桃花>荷叶>薄荷。结论:4种花茶中以玫瑰花的Vc含量最高(42.15mg/g)和亚硝酸盐清除能力(32.50%)最强,桃花的游离氨基酸含量最高(35.51mg/g)。花茶不仅可以美容养颜,还具有保健功能。
Objective:The study aimed to research on the contents of vitamin c(Vc),free amino acids and nitrite scavenging capacity of four kinds of scented tea,and provide the relevant experimental basis for the development of scented tea products and the research of health care function.Method:The content of Vc and free amino acids were determined by molybdenum blue reduction method and ninhydrin colouring,respectively.Under the condition of simulated human gastric juice(pH3.0,37℃),nitrite scavenging ability was studied.Result:Among the 4 kinds of scented tea,the Vc content:rose>peach blossom>lotus leaf>mint.The free amino acids content:peach blossom>lotus leaf>rose>mint.The nitrite scavenging ability:rose>peach blossom>lotus leaf>mint.Conclusion:Among the 4 kinds of scented tea,the highest Vc content(42.15mg/g)and nitrite scavenging capacity(32.5%)were found in rose.The highest free amino acid content was found in peach blossom.The scented tea can not only maintain beauty and keep young,but also have health functions.
