摘要 华根霉(Rhizopus chinensis)属于根霉的一种,其产物具有较高的液化能力、酯类合成能力,广泛存在于土壤,植物残体和酒曲中。文章介绍了华根霉的基本培养特征,产脂肪酶及其相关酶基因的诱变和异源表达,简要介绍了华根霉产淀粉酶、纤溶酶和复合酶的研究进展和蛋白质组学应用在华根霉上的研究进展,最后简述了华根霉在酿酒、化妆品、生物柴油、医学等方面的应用以及当前华根霉生产过程中存在的问题,提出了意见和建议,并对其进一步研究进行展望。 Rhizopus chinensis belongs to Rhizopus,and its products has high liquefaction ability and ester synthesis ability.R.chinensis normally existed in soil,plant residues and Jiuqu.The basic culture characteristics of R.chinensis,the mutagenesis and heterologous expression of lipase-producing and the related enzyme genes were introduced.The research progress of amylase,fibrinolytic enzyme and complex enzyme from R.chinensis and the application of proteomics in R.chinensis were briefly introduced.At the same time,the application of R.chinensis in alcoholic drink making,makeup,biodiesel,medical science was discussed.On this basis,the problems existing in the production process of R.chinensis were introduced,some suggestions were put forward,and further research was prospected.
