摘要
通过ABTS法、DPPH法以及亚铁还原能力测定等方法,比较真姬菇生产废料(菇脚、小菇)与成品菇在不同溶剂(水、甲醇、正丁醇、丙酮)中提取物的抗氧化活性,并分析抗氧化活性与总酚含量的关系。结果表明:3种样品的水提取物清除自由基能力及总还原能力最好,其次是甲醇提取物,丙酮与正丁醇效果较差。同时通过福林-酚比色法检测得到了各溶剂提取物中的总酚含量,发现样品总酚含量与其抗氧化活性之间具有良好的相关性。真姬菇菇脚、小菇、成品菇水提物ABTS法的EC50值分别为1.193,1.109,1.220mg/mL,无显著差异。说明真姬菇菇脚、小菇可作为天然抗氧化剂的提取原料应用于食品科学领域。
The antioxidant activities of four solvents(water,methanol,n-butanol and acetone)extracts from waste of H.marmoreus(stembase and small H.marmoreus)and finished H.marmoreus are studied by determination methods of ABTS,DPPH and ferrous reduction capacity.And then,the relationship between antioxidant activity and total phenol content is analyzed.The results show that the water extracts of the three samples have the best free radical scavenging ability and total reduction ability,followed by methanol extract,acetone and n-butanol are less effective.At the same time,the total phenol content of each solvent extract is measured by Folin-Ciocalteu method.It is found that there's a good correlation between the total phenol content and the antioxidant activity.The EC 50 values of ABTS radical scavenging activity of the water extracts from H.marmoreus stembase,small H.marmoreus and finished H.marmoreus is 1.193,1.109,1.220 mg/mL respectively,there's no significant difference.It indicates that H.marmoreus stembase and small H.marmoreus can be used as the raw materials of natural antioxidant in the field of food science.
