摘要
本试验随机选取10只川南黑山羊,测定其肌肉中的氨基酸组成情况。结果表明,川南黑山羊肌肉中富含人体所必需的17种氨基酸,且含量均较高。其中,EAA/TAA为39.42%,EAA/NEAA为65.08%,高于FAO/WHO的标准;与肌肉风味相关的鲜味氨基酸含量占到了总氨基酸含量的44.23%。可见川南黑山羊不仅能提供优质的蛋白质来源,而且肉质鲜美,营养价值较高。
In this study,10 Southern Sichuan Black Goats were randomly selected to determine the amino acid content in their muscles.The results showed that the muscle of the Southern Sichuan Black Goat contained 17 kinds of essential amino acids for human body,and the content was high.EAA/TAA was 39.2%,EAA/NEAA was 65.08%,which higher than the standard of FAO/WHO;and the flavor amino acid content related to muscle flavor accounted for 44.23%of the total amino acid content.It indicated that the Southern Sichuan Black Goat can provide high quality protein sources,and the meat was delicious with high nutritional value.
