过瘤胃蛋氨酸对舍饲滩羊生长性能、屠宰性能和肉品质的影响 被引量:8

摘要 本试验通过在饲粮中添加过瘤胃蛋氨酸,研究其对舍饲滩羊生长性能、屠宰性能和肉品质的影响,为生产高端羊肉提供科学、可靠的理论依据。选择体况良好、年龄与体重相近的20只滩羊,将其随机分为5组,每组4只,独笼饲养。5组试验羊的饲粮精粗比均为3∶7,其中粗饲料由40%的荞麦秸秆(经纤维素酶处理)和60%的玉米青贮组成。试验Ⅰ、Ⅱ、Ⅲ、Ⅳ和Ⅴ组饲粮在基础饲粮的基础上分别添加0(对照组)、1.5、3.0、4.5和6.0 g/(d·只)过瘤胃蛋氨酸,预试期10 d,正试期60 d。测定指标包括生长性能指标、屠宰性能指标、羊肉理化指标和羊肉食用品质指标。结果表明:与对照组相比,饲粮添加4.5 g/(d·只)过瘤胃蛋氨酸有利于提高舍饲滩羊的日增重(P>0.05),并可显著降低料重比(P<0.05);饲粮添加6.0 g/(d·只)过瘤胃蛋氨酸可显著增加胴体脂肪重(P<0.05),显著降低羊肉的滴水损失(P<0.05);饲粮添加4.5 g/(d·只)过瘤胃蛋氨酸时羊肉的剪切力降低(P> 0. 05)。综上所述,舍饲滩羊饲粮中添加4. 5~6.0 g/(d·只)过瘤胃蛋氨酸能提高其日增重,降低料重比,改善肉品质。 This experiment was conducted to study the effects of adding rumen-bypass methionine into diets on growth performance,slaughter performance and meat quality of stabling Tan sheep,and aimed to develop additive for providing scientific and reliable theoretical basis for production of high-grade mutton.Twenty Tan sheep,which had a good condition and a similar age and body weight,were randomly divided into five groups,and each group had four sheep.Each of sheep was raised in a single cage.The ratios of concentrate to roughage in the diets of sheep in five groups were all 3∶7,and the roughage was constituted by 40%buckwheat hay straw(treated by cellulase)and 60%corn silage.The diets of trailⅠ,Ⅱ,Ⅲ,ⅣandⅤgroups were added 0(control group),1.5,3.0,4.5 and 6.0 g/d rumen-bypass methionine into a basal diet for each sheep,respectively.Pretrial period was 10 d,and trial period was 60 d.The measured indexes included growth performance,slaughter performance,physicochemical indexes of mutton and edible quality indexes of mutton.The results showed as follows:compared with the control group,diet added 4.5 g/(d·sheep)rumen-bypass methionine was benefit to improve the daily gain(P >0.05),and could significantly decrease the feed/gain(P<0.05);diet added 6.0 g/(d·sheep)rumen-bypass methionine could significantly increase the carcass fat weight(P<0.05),and significantly decrease the drip loss of mutton(P<0.05);diet added 6.0 g/(d·sheep)rumen-bypass methionine 4.5 g/(d·sheep)rumen-bypass methionine decreased the shear force of mutton(P >0.05).It is concluded that the addition of 4.5 to 6.0 g/d for each sheep can increase daily gain,decrease feed/gain and improve meat quality of stabling Tan sheep.
