天津棚栽火龙果蜂蜜性能分析

摘要 为充分利用北方大棚种植火龙果的优势,利用蜜蜂对大棚种植得到的火龙果花进行开发。本研究对得到的火龙果蜂蜜的理化指标和挥发性成分进行分析。结果表明,制得的火龙果蜂蜜品质优良,符合行业一级品标准,同时其成熟度较高,还原糖含量(89.02%)和淀粉酶活性(16.52 mL·g^(-1)·h^(-1))均显著高于行业标准;对其挥发性成分的研究表明,火龙果蜂蜜的挥发性呈味物质主要是由玫瑰、柑橘以及柠檬等香味组成,这些香味赋予了火龙果蜂蜜更为浓郁的甜蜜香味。该研究对进一步开发火龙果蜂蜜的价值提供了一定的指导意义。 In order to make full use of the great advantage of pitaya cultivation in greenhouses in northern China,the physical and chemical indexes and volatile components of pitaya honey obtained from the development of pitaya flowers planted in greenhouses by bees were analyzed in this paper.The results showed that the quality of the prepared pitaya honey was excellent,which met the industry first-class standard,and its maturity was high.The reducing sugar content(89.02%)and amylase activity(16.52 mL·g^-1·h^-1))were significantly higher than the industry standard.The volatile components of pitaya honey showed that the volatile flavoring substances were volatile.It was mainly composed of rose,citrus and lemon aromas,which gave the pitaya honey a more intense sweet aroma.The results of the experiment provided some guidance for the further development of the value of pitaya honey.
