铁路餐饮业建立HACCP管理体系的探讨

摘要 运用HACCP原理,参考国内外食品行业、餐饮业已开展的研究,结合现场工作经验,探讨在铁路餐饮业建立HACCP管理体系的方法。通过确定关键控制点,设定关键限值、监控方式、纠偏措施,以及验证与记录,建立铁路餐饮业HACCP管理体系,进而提出铁路餐饮业属于中小型餐饮,通过简化步骤,能够运用HACCP管理体系规范铁路餐饮、提高铁路食品安全。 Using HACCP principle,referring to the researches already carried out in food industry and catering industry at home and abroad,and combining with the field work experience,this paper discusses the method of establishing HACCP management system in railway catering industry.The HACCP management system of railway catering industry was established by determining key control points,setting key limits,monitoring methods,corrective measures,verification and recording.Furthermore,it is proposed that the railway catering industry belongs to small and medium-sized catering industry.By simplifying the steps,HACCP management system can be used to standardize railway catering industry and improve railway food safety.
