摘要
中国的素食制作历史悠久,可以上溯至两汉魏晋时期。素食制作在历史过程中,不仅发展出许多名菜佳肴,而且制作工艺也日趋成熟。如今,素食的饮食方式受到越来越多的关注,人们也在关注着素食的制作。通过研究古代的素食制作工艺,可以看出,蒸、煮、煨、炒、炸等是主要的工艺手法,对于今天继承和发展素食遗产有着积极的现实意义。
China has a long history in making vegetarian diets which may trace back to Western and Eastern Han Dynasty and the Wei and Jin Dynasties. Not only various reputed dishes and delicacies of vegetarian diets have been developed in such historical process but also their making techniques are day by day matured. Nowadays, enjoying vegetarian diets is drawing more and more attentions together with the making techniques. It can be seen through research on ancient making techniques of vegetarian diets that the major making techniques, such as steaming, boiling, low fire stewing, stir frying and deep-frying etc., are still presenting positive realistic significance for modern people to inherit and develop the heritage of vegetarian diets.
