摘要
豆腐及相关产品,在日常生活中司空见惯,吃的花样可谓精彩纷呈,多种多样,应有尽有。本研究拟从饮食人类学的角度,阐释豆腐作为饮食所承载的中国传统文化,以及中国传统饮食文化中豆腐的制作历史、制作和销售方式等,从而呈现豆腐所具有的文化内容和象征意义。
Tofu and its related products are very common in daily life.There exist various ways of cooking Tofu.This paper,from the perspective of food anthropology,explains the traditional culture contained in Tofu.Meanwhile,it explores the producing history,method of producing and selling so as to present the culture and symbolic meaning of Tofu.
