摘要
探讨木聚糖酶在酒精浓醪发酵中的应用。实验室研究结果表明:在浓醪发酵开始时加入木聚糖酶,添加量为每克原料6个单位,可有效降低醪液黏度,可提高淀粉出酒率1.5个百分点,缩短发酵周期4h。
To explore the application of xylanase in high gravity ethanol fermentation. The results on laboratory research scale indicated that the addition of xylanase of 6 units per gram of raw material at the beginning of high gravity fermentation could effectively reduce the viscosity of the mash, increase the ethanol yield from starch by 1.5%and shorten the fermentation period for 4 hours.
