摘要
以黑米作为原料,在单因素试验的基础上,应用响应面分析法对黑米发芽条件进行优化。获得的最佳黑米发芽工艺条件为:Ca2+浓度0.5 mmol/L,发芽温度22℃,发芽时间5 d。验证试验表明,在此工艺条件下的蛋白酶活力为347.5 U。
Black rice taken as raw material, the germination condition of black rice was optimized by response surface analysis on the basis of single factor experiment. The best black rice germination process condition obtained is: The Ca^2+ concentration 0.5 mmol/ L, germinating temperature 22 ℃, germination time 5 d. The validation test showed that the protease activity under this condition is 347.5 U.
