摘要
为提高大豆肽的产率,以脱脂豆粕为原料,采用酶法制备大豆肽,利用正交试验确定最佳工艺条件。试验结果表明:在50℃条件下浸蛋白,当中性酶:风味酶比例2∶1、酶解时间3 h时,大豆肽的得率最高。
In order to improve the yield of soybean peptide, soybean peptide was prepared by enzymatic method with defatted soybean meal as raw material. Experimental results show that under the condition of 50 ℃ protein, when the ratio of neutral enzyme to flavor enzyme was 2∶1 and the enzymatic hydrolysis time was 3 h, the yield of soybean peptide was the highest.
