摘要 采用火焰原子吸收光谱法,测定山药中的钙、锰、铁、铜、铬、铅等微量元素的含量。结果表明,含量高低依次为:钙142.429μg·g^(-1)、铁28.660μg·g^(-1)、锰6.584μg·g^(-1)、铜1.749μg·g^(-1)、铬0.268μg·g^(-1)、铅0.124μg·g^(-1)。样品回收率为91.2%~108.7%,测定元素的相对标准偏差为0.36%~3.68%,方法简单,精密度和灵敏度高,结果可靠。对比国家食品安全标准,铬、铅两种元素均在最高限量范围内,不会对人体造成危害。 By flame atomic absorption spectrometry, the trace elements of calcium, manganese, iron, copper, chromium, and lead in Chinese yam were determined. The results showed that the contents were: calcium 142.429 μ g/g, iron 28.660 μ g/g, Manganese 6.584 μ g/g, copper 1.749 μ g/g and chromium 0.268 μ g/g, lead 0.124 μ g/g in sequence. The sample recovery rate was 91.2%~108.7%, the relative standard deviation of the element was 0.36%~3.68%. The method was simple, precise, sensitive and reliable. Compared with national food safety standards, the levels of chromium and lead were in the largest range, and they were not harmful to human health.
