摘要
中国白酒作为一种生态产品,自然环境是影响其产品风格与品质的关键因素之一。酿造工艺与自然环境的和谐统一才可能酿造出风格独特、品质优良的白酒。本研究以中国三大基础香型清香型、浓香型、酱香型白酒为研究对象,选择与白酒生产密切相关的气候因素,对比分析其代表品牌生产地的气候条件。以期为进一步解析中国白酒传统酿酒工艺与自然环境的本质联系提供参考和依据。同时,也对三大香型白酒在非传统典型产地酿造中工艺的调整,以及其他香型白酒的酿造具有重要的指导意义。
Baijiu being an ecological product,natural environment is always one of the key factors influencing its style and its quality.Only the harmony between natural environment and producing technology could probably produce Baijiu products with unique style and high quality.In this study,three main Baijiu products including Qingxiang Baijiu,Nongxiang Baijiu,and Jiangxiang Baijiu were used as the research objects,and the climate factors closely related to liquor production were selected and compared to analyze the fundamental correlations between natural environment and liquor-making technology.Meanwhile,the study was of great significance in guiding technological adjustment of the three main Baijiu flavor types in non-traditional producing areas as well as the production of Baijiu of other flavor types.
