不同清香型大曲理化生化指标和挥发性成分分析 被引量:11

摘要 以6种国内不同来源的清香型白酒大曲,包括汾酒清香曲、太原清香曲、孝义清香曲、江苏清香曲、四川清香曲和山东清香曲为样品,从感官特征、微生物分析、理化生化指标以及挥发性成分等方面对不同大曲样品进行比较分析。实验结果表明,不同来源的清香型大曲的品质有较大差异。 In this study,six Qingxiang Daqu products from different places including Fenjiu Daqu,Taiyuan Qingxiang Daqu,Xiaoyi Qingxiang Daqu,Jiangsu Qingxiang Daqu,Sichuan Qingxiang Daqu,and Shandong Qingxiang Daqu were used as the research objects,their sensory characteristics,microbial groups,physiochemical and biochemical indexes,and volatile compounds were analyzed and compared.The results proved that there was great difference among Qingxiang Daqu products from different places.
