不同热水浸提条件对红凤菜花色苷提取物品质的影响

摘要 为进一步优化热水浸提红凤菜花色苷的提取工艺,以2组不同预处理的新鲜红凤菜叶片为试材,研究不同提取温度—时间组合对花色苷提取物色价和总酚含量的影响。结果表明,温度升高时完整叶片和剪小块叶片的花色苷提取物的总酚含量都下降;完整叶片的提取物色价随之提高,而剪小块叶片的提取物色价随之下降。为获得较高的色价和总酚含量,完整叶片的最优提取条件为提取温度95℃,提取时间90 min,剪小块叶片提取条件为提取温度65℃,提取时间180 min。 In order to further optimize the hot water bath extraction process of anthocyanins from Gynura bicolor,the effects of different extraction temperature-time combinations on the colour value and total phenolic content of anthocyanin extracts were studied with two different pretreated fresh leaves of Gynura bicolor taken as materials.The results showed that when the temperature increased,the total phenolic content of the anthocyanin extracts of the intact leaves and the cut pieces both decreased,and the color value of the former increased,while that of the latter decreased.To obtain anthocyanin extracts with high color value and total phenol content,the intact leaves should be treated with 95℃,90 min while the pieces should be treated with 65℃,180 min.
