摘要 风味萝卜是指以萝卜为原材料,经过腌制、发酵等工艺制成的具有特殊风味的萝卜食品,口感爽脆、营养丰富,加工方法历史悠久,品种多样,深受人们喜爱。对风味萝卜的加工原料、加工方法、影响因素等进行了综述,并对风味萝卜加工存在的问题提出了建议,以期能促进风味萝卜加工产业的发展。 Flavored radish refers to the radish food with special flavor which is made from radish as raw material through curing and fermentation.It is crisp and nutritious.In this paper,the selection of varieties,processing methods and product types of flavored radish were summarized.The objective of the paper was to promote the development of flavor radish processing industry.
