Supervision and sampling results analysis of pastries in a province from 2015 to 2017

摘要 目的了解某省2015年-2017年糕点食品安全状况,为开展专项食品安全监管提供参考。方法收集某省2015年-2017年国抽糕点结果相关数据,采用SPSS 16.0软件进行统计分析。结果某省近3年国抽糕点总体合格率为97.08%。生产环节与流通环节不合格率差异无统计学意义;农贸/批发市场抽检出不合格产品的风险显著高于商场/超市、食杂店及其他业态;乡村的不合格率显著高于城市;5月份和9月份抽检出不合格产品的风险高于其他月份;抽检发现的主要问题是超范围/限量使用食品添加剂和微生物污染,此外还存在非法使用非食用物质和品质指标不达标的情况。结论有关监管部门应加强对高风险业态、区域的监管力度,加大高风险时节抽检量,有靶向性地开展专项整治行动,进一步提高监管效能。 Objective To understand the food safety of pastry in a province from 2015 to 2017, so as to provide reference for carrying out special food safety supervision. Methods The data of national supervision sampling for pastries were collected from 2015 to 2017 in a province, and SPSS 16.0 software was used for statistical analysis. Results In the last three years, the total qualified rate of pastries was 97.08% in the province. There was no statistical difference between the unqualified rate of production link and circulation link. The risk of unqualified products detected in farmers market or wholesale market was significantly higher than those in shopping malls or supermarket, food grocery stores, etc. The unqualified rate in rural areas was significantly higher than those in urban areas. Risk of unqualified products detected in May and September was higher than that in other months. The main problems were the use of food additives over or beyond limits and microbial contamination. There were also cases of illegal use of non-edible substances and substandard quality indicators. Conclusion To further improve regulatory effectiveness, the relevant regulatory departments should strengthen the supervision of high-risk business, regional supervision, increase the quantity of sampling in high risk season, and carry out targeted special rectification actions.
