摘要
酶是一种高效、安全的生物催化剂,因其在食品生产中多样化的功能,已被广泛应用于食品原料开发、品质改良、工艺改造等食品工业的各个领域,文章主要介绍了近年来酶在制糖、淀粉加工、乳制品加工、果汁饮料加工、肉制品加工等方面的应用。
Enzyme is a kind of efficient and safe biocatalyst.Due to its diversified functions in food production,it has been widely used in various fields of food industry such as food raw material development,quality improvement and process modification.This paper mainly introduces the application of enzyme in sugar refining,starch processing,dairy products'processing,juice beverage processing,meat products'processing and so on.
