摘要
介绍了食品辐照技术的原理,辐照技术降解毒物的机理,降解速率的影响因素以及辐照对产品品质的影响因素和辐照的安全性,并对辐照技术在未来的使用进行了展望。
The principle of food irradiation technology and the mechanism of degradation of toxicants by irradiation were introduced. The influence factors of irradiation rate , the effect of irradiation on product quality and the safety of irradiation were introduced. And the future application of irradiation technology was also discussed.
