植物膳食纤维改性技术专利综述

摘要 膳食纤维包括水溶性膳食纤维和非水溶性膳食纤维,其中水溶性膳食纤维具有更重要的生理功能,可用于调节血压、降低血糖和血脂等。如何对膳食纤维进行改性以提高水溶性膳食纤维的含量已成为近年来食品工业领域的研究热点之一。本文对植物中膳食纤维改性技术专利的申请趋势、申请产出国和申请人分布进行了统计分析,并从物理、化学、生物和联合处理4个研究方向对其技术方向和技术手段的发展脉络进行了梳理,以期为植物膳食纤维改性技术的发展提供参考。 Dietary fiber includes soluble dietary fiber(SDF)and insoluble dietary fiber(IDF).SDF has more important physiological functions,which can be used to regulate blood pressure,lower blood sugar and blood lipids.How to increase the content of SDF in dietary fiber has become one of the research hotspots in the food industry in recent years.This paper analyzed the application trends,country and applicant distribution of patent for modification on plant dietary fiber.The development of its technical direction and technical means has been sorted out from the four research directions,including physics,chemistry,biology and combined technology,so as to provide references for the development of plant dietary fiber modification technology.
