摘要
综述金耳的食药用价值,相关成分金耳多糖、TAPAI、TAPBI的提取技术,金耳的深层发酵,抗氧化性及其产品的研制工艺;金耳在食品工业应用中的状况,特别是在饮料产品中的应用。指出金耳在食品工业应用中存在的问题。
The edible and medicinal value of Tremella aurantialba,the extraction technology of related components of polysaccharide TAPAI and TAPBI,submerged fermentation technology,and development process of products are reviewed.The application of Tremella aurantialba in food industry,especially in beverage products,and problems existed are summerized.Ideas and solutions to the comprehensive utilization of Tremella aurantialba in the future are put forward.
