摘要
红芸豆富含人体所需的多种氨基酸、维生素和矿物质,具有丰富的营养价值、食用价值以及药用价值。红芸豆产量高,消费市场大,已成为多个地区农民增收的主要经济作物。本文简要阐述分析了红芸豆淀粉、蛋白、栽培技术等方面的研究进展,旨为红芸豆资源的开发与利用奠定基础。
Red kidney bean is rich in a variety of amino acids, vitamins and minerals required by the human body,with rich nutritional value, edible value and medicinal value. The yield of red kidney bean is high and the consumption market is large. In this paper, the research progress of red kidney bean in the aspects of starch, protein and cultivation technology were briefly described and analyzed, so as to lay a foundation for the development and utilization of red kidney bean resources.
