摘要
本试验采用国家标准方法对黑花生脂肪油进行了理化指标、营养成分、卫生指标及急性毒性试验研究,探讨了以黑花生为原料开发新型食用植物油的可能性。研究结果表明:黑花生脂肪油理化性能良好,营养成分丰富;总砷、铅、黄曲霉毒素B1及苯并(а)芘含量符合食用植物油卫生标准;急性毒性试验结果初步判定其食用安全性。可见黑花生脂肪油是一种营养丰富的植物油源。
To investigate the probability of developing a new vegetable oil based on black peanut, we analyzed physicochemical indexes, nutritional composition, hygienic indexes and the acute toxicity test of black peanut oil by standard method. The research results showed that black peanut oil had good physicochemical properties and was rich in nutritional composition. The total content of Arsenic, Lead, Aflatoxin B1 and Benzo (а) pyrene were in accordance with hygienic standard for edible vegetable oil. The acute toxicity test showed that black peanut oil was safe. Black peanut oil can be considered to be a nutritional vegetable oil resource.
