摘要
禽蛋是一种营养丰富的纯天然食品,它与肉制品、乳制品、蔬菜和粮食一起构成了人们日常所需的重要营养来源。同时,受精后的禽蛋具有种用的作用,在适当的温度和湿度等条件下经过孵化又可发育成雏禽,对禽类的养殖和禽肉的提供具有十分重大的影响。蛋品质的优劣既可反映蛋的食用价值,也可反映蛋的种用价值。因此,本文对蛋品质的衡量指标,影响蛋品质的因素等进行综述,以期为后续研究提供参考。
The poultry eggs have always been considered a nutritious natural food. And its together with meat products, dairy products, vegetables and food, it forms an important source of nutrients for people's daily requirements. At the same time, fertilized poultry eggs can be used for hatching;it can be developed into young poultries after hatching under appropriate conditions of temperatures and humidity. And it has a very significant impact on poultry farming and poultry meat supply. The quality of the poultry eggs can reflect the edible value of the poultry eggs and reflect the hatching value of the poultry eggs. So, the article reviews the indexes of poultry eggs quality and the factors affecting poultry eggs quality, in order to provide reference for subsequent research.
