摘要
近代以来,关内移民大批进入东北地区,促使东北饮食文化发生了变迁。在改变东北传统饮食结构,改进烹调技法,转变饮食行为和观念等方面产生巨大影响。移民的到来,促进了东北饮食文化向多元化方向发展,形成了既不完全等同于东北,又不与中原地区一致的特色饮食文化,呈现出适应性、能动性、包容性等地域性特征。
Since modern times,a large number ofmigrants from inside Shanhaiguan Pass had entered Northeast China,which had promoted the changes of foodculture in Northeast China,including those in dietary structure,cooking techniques and dietary behaviors and ideas. The arrival of migrants had promoted the diversification of food culture,and formed a uniquefood culture characterized by adaptability,initiative and inclusiveness.
