摘要
对产自山西、河北等地的27个燕麦样品的常规营养品质、β-葡聚糖含量和植酸含量进行了测定分析。结果表明,不同地区间燕麦样品蛋白质含量差异不显著,β-葡聚糖含量在3.00%~5.00%的品种较多,植酸含量主要分布在11.00%~15.00%。研究可为燕麦营养研究、优良品种选育与健康食品开发提供借鉴。
The routine nutritional quality,content of β-glucan and content of phytic acid of 27 oats samples from Shanxi and Hebei was evaluated and analysed. The results showed that no significant difference was found between samples' protein content from different regions. There were many varieties with β-glucan content ranging from 3.00% to 5.00%,and physic acid content mainly ranged from 11.00% to 15.00%. This study provided basis for the researching of oat nutrition,the breeding of fine varieties and the development of healthy food.
