摘要
两亲性多糖具有荷载多酚并向人体肠道稳定输送的特性,但目前对于二者间相互作用的探讨较少。试验以辛烯基琥珀酸玉米淀粉酯及不同结构多酚为主体,研究多酚结构对其与辛烯基琥珀酸玉米淀粉酯相互作用的影响,发现羟基数量、糖苷化、甲基或甲氧基化等多酚结构的变化显著影响多酚与辛烯基琥珀酸淀粉酯的相互作用。该文对于研究疏水性多糖及多酚间相互作用具有一定的参考价值。
Amphiphilic polysaccharide could deliver polyphenol to human intestinal tract through trapping polyphenol molecule to its hydrophobic core. The interaction between starch octenylsuccinate and polyphenol was studied in this experiment. It was found that the amount of hydroxyl, galactosylation, methylation and methoxylation could significantly affect the interaction between starch octenylsuccinate and polyphenol. This study will be helpful for understanding interaction between hydrophobic polysaccharides and polyphenols.
