摘要
生物传感器作为一种全新的微量分析技术,具有较快的反应速度、较强的特异性以及较低的成本等优势,目前正成为食品安全检测技术研究的热点。生物传感器在食品微生物毒素、农兽药残留、不法添加物、食物品质等的检测中应用广泛。本文综述了生物传感器的基本原理、主要分类、在食品检测中的应用及前景展望。
Biosensors as a new microanalysis technology, with the advantages of fast reaction rate, very strong specificity and relatively low cost,it is becoming a new hotspot in food safety testing technology research now. Biosensors are widely used in food microbial toxins, pesticide residues in veterinary drugs, illegal additives, food quality and other aspects of the test. The basic principle, main characteristics and application of the biosensor in food analysis and its prospect are reviewed.
