摘要
采用气相色谱-质谱联用(GC-MS)的方法分析了花生酸化油的脂肪酸组成,并对其理化性质进行了研究,实验结果显示,花生酸化油的酸值(KOH)为83.45mg·g^(-1),碘值(I2)为97g·(100g)^(-1),皂化值为185.53mg·g^(-1),水分及挥发物含量为1.59%;主要脂肪酸为棕榈酸(14.65%)、硬脂酸(4.45%)、油酸(32.18%)和亚油酸(43.85%),其中不饱和脂肪酸的含量高达79.11%,具有较高的工业应用价值。
Physicochemical properties ofpeanut acidified oil were as follow: Acid value(KOH) 83.45 mg·g ^-1 , iodine value(I2) 97 g·(100 g)^-1 , saponification value(KOH) 185.53 mg·g ^-1 , content of water and volatile matter 1.59%. Thefatty acid composition of peanut acidified oil was also analyzed by gas chromatography mass spectrometry (GC-MS).Among determined fatty acids,linoleic acid (43.85%) and oleic acid (32.18%) were the highest, followed by palmitic acid (14.65%) and stearic acid (4.45%).The content of unsaturated fatty acid is 79.11%, which has high industrial application value.
